One word to describe the last month: Canning
Since the beginning of August it seems like I have been canning in my sleep!! In this photo I was about to insert two trays of tomatoes into the oven to roast them. I have found with my older oven it takes a good two hours at 400 degrees to get them roasted. Once roasted I remove as much of the skin as possible and make salsa. So far I have about 32 pints of salsa made and likely that will be it for this year. I used jalapenos in the hot recipe and anaheim peppers for the mild version. Same recipe, just changed up the pepper used.
In addition to salsa I have been making tomato sauce, pickled beets, pickled mixed vegetables, pickled green beans and lots of pickles!! I think this canning will continue another week or two and then likely come to an end as we clean up the gardens and plant our cover crop of winter rye.
As customers have come through the store to buy eggs or produce I hae been sharing with them about the canning and many asked if we would have any for sale. Unfortuantely at this point without a commecial kitchen on site or access to a local one I will have to keep the cannigng all to myself!!
